I’m always looking for fun new ways to use up chili! 

These smoky chili stuffed peppers are super delicious, easy and the perfect way to use up some extra chili. It’s a great way to switch up a cozy, comforting meal in cooler months. And I always welcome variety!

Also, who doesn’t love to stuff a pepper? I’ll eat stuffed peppers with just about anything. 

And I have a lot to say about them.

The secret to making the best stuffed peppers? You have to roast them first.

This is how I’ve been doing it for years and I’m telling you, it makes the best stuffed peppers ever. It doesn’t matter what you’re stuffing them with! This works for anything.

The key is seasoning and roasting the peppers for about 15 minutes before you stuff them, which helps to develop the flavor a bit. They get all roasty and slightly caramelized and frankly, delicious! 

Then, you can stuff them with whatever you want!

In this case, the chili tends to be hot so you actually don’t even have to re-bake them. I still do throw them back in the oven to bring everything together. And because I’m a slave to melty cheese. But it’s not quite necessary, especially if you don’t mind some bite to the pepper! 

Another reason I love this recipe is because it can be another versatile way to use chili, even on the same night that you’re serving bowls of it! If you are feeling like a stuffed pepper, it’s super simple and can come together in 20 minutes if you have the chili made.

Having this easy chili in your back pocket makes snack life a lot simpler too. If you ever want to make chili cheese nachos, fries, hot dogs or more – you can make it right in a skillet and be done.

Smoky Chili Stuffed Peppers

These chili stuffed peppers are a fun twist on serving a classic bowl of chili! Roasted peppers are stuffed with smoky chili, melty cheese and all the toppings to bring you a delicious, satisfying and cozy meal.

  • Preheat the oven to 425 degrees F. Slice the peppers in half lengthwise and place them on a baking sheet. Spray with olive oil spray and sprinkle all over with salt and pepper.

  • Roast the peppers for 10 to 15 minutes.

  • Remove the sheet and stuff each pepper with about ⅓ cup chili. This will obviously depend on the size of your peppers! Try to get peppers that are uniform in size. FIll each pepper up to the top.

  • Top each with a sprinkling of cheddar. Return the pan to the oven and bake for 8 to 10 minutes, or until the cheese is melty and bubbly.

  • Serve immediately with sour green, green onions, tortilla chips and cilantro.
